Fusion is a tricky business; it was vogue, then it wasn’t, then it was back, and then it wasn’t… but at the end of the day, the food has done the talking. Luckily, Nouvelle speaks both Japanese and French fluently. When the humble edamame can be transformed via cured salmon and hazelnut, you know you’re onto something good.
Creative menu, correct execution and a lot of attention given to the presentation. Beautiful dishes. Good taste, not great, not on par with the looks. Nice decor, it is a pity the place was nearly empty.
